Honey and Lavender Cookie

INGREDIENTS

COOKIE MIXTURE

  • 96 grams of unsaltedbutter
  • 1 tbsp of driedlavender
  • 96 grams granulatedsugar
  • 2 tbsp of honey2 tbsp of demerarasugar
  • 224 grams of plainflour

INSTRUCTIONS

  1. in a mixing bowl, beat the butter andgranulated sugar together until lightand fluffy
  2. add lavender and honey to butter/sugar mix
  3. add plain flour and beat just until it allcomes together
  4. use your hands to knead the mixturegently until it is nice and smooth
  5. divide the dough in half and roll eachhalf into a 6 inch long
  6. preheat oven to 160C. Put a bakingsheet (grease proof paper) on a bakingtray.
  7. remove cookie dough from refrigeratorand cut into 1/4 inch and lay it out onthe prepared tray
    bake for 15 minutes or until thecookies are lightly golden brown
  8. allow to cool completely beforeserving with your favourite tea. store inan airtight container for upto 3 days
