Spicy Honey Beef Brochettes
INGREDIENTS
Beef Brochettes
- 300 lean beef, diced
- 1/2 onion, chopped
- 1 Red onion, quartered
- 1 can of peeled plum tomatoes
- 1 tbsp tomatoes puree
- 2 tbsp honey
- 2 tsp chilli flakes
- 1 tsp vegetable oil
salt to taste - 1 pack of skewers
Served with Kachumnari
- 1/2 Red onion, diced
a handful of plum tomatoes, halves - 1 handful of coriander, chopped
- 2 tsp lemon juice
- 1 green chilli, finely chopped
Honey roasted potatoes fries
- 1 tsp honey
- 3 sweet potatoes
salt and pepper to taste - 1 tsp olive oil

INSTRUCTIONS
- Soak the wooden skewers in water for about 20 minutes and preheat the oven at 220 fan/ 6 mark gas.
- Form the brochettes by alternately threading meat and 2 to 3 pieces of onion onto the skewer.
- Squeezed peeled plum tomatoes and mix in the diced onions, chilli flakes and tomato puree. This should create a medium thick sauce; add a bit of oil and water to lighten the consistency
- Reserve half of the sauce for dipping and half the sauce in a pan with the skewers and turn to coat, let it marinade for 30 minutes
- Chop sweet potatoes into big chunks. In a big bowl mix the sweet potatoes with salt, pepper, olive oil and honey. Lay the sweet potatoes out onto a baking tray and roast it for 40 minutes
- Lay the skewer on the baking tray (or bbq) let it cook for 15 minutes then brush some more sauce on all sides of the brochettes as you flip it over to the other side and cook it for another 15. Flip it one last time and leave it to cook for 15 minutes
- In another bowl mix red onion, plum tomatoes, cucumber,coriander, chilli and lemon juice together and leave it aside
- Plate up the brochette, sweet potatoes fries and kachumbari
